Smoked Mackerel Pasta with Dill, Lemon & Chilli

Serves 4: Prep Time: 10 minutes / Cook Time: 20 minutes

A bright, zesty midweek pasta that comes together in minutes. Rich smoked mackerel melts into warm pasta, lifted with lemon, dill and a touch of fresh chilli.

INGREDENTS:

• 2 smoked mackerel fillets

• 1 red chilli, finely sliced

• 1 large handful dill, roughly chopped

• ½ garlic clove, finely grated

• 1 tbsp baby capers

• 150 g short pasta

• 3 tbsp extra virgin olive oil

• 1 large lemon, zested and juiced

INSTRUCTIONS:

Build the dressing
Combine the capers, lemon zest and juice, chilli, garlic and olive oil in a large bowl. Season generously and stir to combine.

Cook and dress the pasta
Cook the pasta in well-salted boiling water until tender. Drain, then add the hot pasta to the bowl, tossing well so it absorbs the dressing.

Finish with mackerel and herbs
Flake the mackerel into chunky pieces, discarding the skin. Add to the pasta with the dill and gently fold through. Serve warm, finished with extra dill.
