Mackerel spend their lives feeding in clean, cold waters rich in small fish like sprat, the foundation of their natural diet and one of the reasons for their exceptional flavour.
Timing is everything when it comes to taste. Norwegian vessels focus on the premium autumn season, when the fish return from feeding grounds with the highest fat levels of the year. This “fat season” brings richer flavour, higher omega-3 content, and better texture, making autumn-caught mackerel the preferred choice for quality-focused buyers like Fisch.
A focus on quality from the moment of capture
The Norwegian fleet relies primarily on purse-seine gear, a method designed to encircle entire shoals quickly and cleanly. This approach minimises bycatch, preserves the condition of the fish, and ensures a consistent, high-grade product.
Rapid cooling & gentle handling
Maintaining temperature is critical for pelagic species, so vessels are equipped with chilled seawater tanks. Fish are cooled to around 0°C within minutes of capture, preserving freshness and preventing quality loss.
Throughout the process, modern pumping systems move mackerel from net to tank, and eventually from vessel to shore, without unnecessary pressure or rough handling. Once landed, the fish are immediately processed, filleted or whole, and frozen to lock in premium quality.
At the heart of Fisch is an unwavering commitment to quality. We are deeply passionate about our craft, every fish we process has been hand-selected for the highest grade available.
Our fillets are 100% boneless, carefully prepared, lightly salted, and hot-smoked over German beechwood at around 74 °C. Throughout the process, moisture is closely monitored to achieve a soft, buttery texture that defines true Nordic-style smoked mackerel.
Hygiene and safety are maintained through our rigorous internal HACCP program, ensuring full traceability for every product that leaves our factory.
