Peppered Mackerel Salad with Mango, Avocado + Turmeric

Serves 4: Prep Time: 15 minutes

A refined, fresh salad bringing together sweet mango, ripe avocado and lightly spiced mackerel. Made for warm evenings and relaxed, elegant entertaining.

INGREDENTS:

  • 4 tbsp extra virgin olive oil

  • 2 tbsp white wine vinegar or apple cider vinegar

  • ½ tsp honey or caster sugar

  • 1 small bunch coriander, leaves and stalks separated and finely chopped

  • 300g peppered hot-smoked mackerel fillets, skin removed and flaked into large pieces

  • 1 romaine lettuce, shredded

  • 1 red onion, thinly sliced into half-moons

  • 400 g black-eyed beans, drained and rinsed

  • 1 large mango, peeled and cut into 1 cm cubes

  • 1 large avocado, cut into chunks

  • 1 tsp ground turmeric

  • Sea salt and freshly cracked black pepper

INSTRUCTIONS:

Make the dressing

In a small bowl, whisk together the olive oil, vinegar, honey (or sugar), turmeric and the chopped coriander stalks.

Season to taste and set aside.

Assemble the salad

Arrange the lettuce, onion, black-eyed beans, mango, avocado and coriander leaves on a large platter (or divide across 4 plates).

Top with the flaked mackerel.

Dress and serve

Pour the turmeric dressing over the salad.

Serve immediately while everything is fresh.
