Smoked Mackerel & Pickle Potato Canapés

Serves 4-6: Prep Time: 10 minutes / Cook Time: 20 minutes

A simple Norwegian favourite, these potato canapés pair tender boiled potatoes with smoked mackerel, creamy mayonnaise and sharp pickle, finished with fresh herbs.

INGREDENTS:

  • 400g Dutch cream potatoes, boiled until tender

  • 1 x 120g pack Smoked mackerel (pepper or natural), flaked

  • Whole-egg mayonnaise

  • Pickles (cornichons or similar), thinly sliced

  • Fresh green herbs (dill, chives or parsley), finely chopped

  • Sea salt and freshly cracked black pepper

INSTRUCTIONS:

Prepare the potato bases
Once cool enough to handle, slice the boiled potatoes into 3 cm-thick rounds. Season lightly with salt and pepper and arrange on a serving platter.

Add the base layer
Spread a thin, even layer of mayonnaise over each potato slice.

Top with mackerel
Flake the smoked mackerel into generous pieces and place on top of the mayonnaise.

Finish with pickle and herbs
Add a slice of pickle to each canapé, then finish with finely chopped green herbs. Serve immediately, or chill briefly before serving.
